Tofu Stir Fry

garlic, minced |

tofu, crumbled or cubed |
| 1 pound |
broccoli, chopped |
| 2 tablespoons |
sesame or peanut oil |

ginger, chopped |

green pepper, chopped |
| 2 cups |
mixed fresh vegetables (green beans, carrots, asparagus, etc) |
| 2 tablespoons |
soy sauce |
| 2 cups |
vegetable broth |
| 1 tablespoon |
nutritional yeast |
| 1/2 teaspoon |
calcium powder |
| 1/2 teaspoon |
kelp powder |
| 1 tablespoon |
liquid lecithin |
| 2 cups |
cooked brown rice |
- In a wok or large frying pan, add oil, garlic, and tofu.
- Stir fry until tofu begins to brown.
- Add broccoli, ginger, pepper, and mixed veggies.
- Stir fry for 3 minutes, then add soy sauce and broth and cook for about 10 minutes or until vegetables are tender.
- Remove from heat.
- Stir in brown rice, yeast, calcium, kelp and lecithin.
- Serve.
