Grilled Veggies
Who loves to eat al fresca more than a dog?
| 1 clove |
garlic, minced |
| 2-3 tablespoons |
olive oil |
| 1 |
red or green pepper, sliced |
| 1 |
eggplant, sliced |
| 1 |
squash, peeled and sliced |
| 1 |
sweet potato, sliced |
| 1 ear |
fresh corn |
| 1 |
large white potato, sliced |
| 1 can |
navy beans |
- In a small bowl, mix garlic and olive oil before slicing veggies.
- Heat grill.
- Brush each vegetable slice and the ear of corn with olive oil mixture, till coated.
- Wrap corn in foil.
- Wrap potato pieces separately in foil.
- Grill all veggies, except for the beans, until done (tender, with nice pretty grill lines).
- When cooled, mix with navy beans and serve.
