A birthday treat!
2 cups whole wheat flour
2 tablespoons salt free veggie broth powder
2 teaspoons baking powder
1/3 cup vegetable oil
NRG egg replacer equivalent to 1 egg
1 cup vegetable stock or rice milk
1/2 cup peanut butter
  • Preheat oven to 350.
  • Combine flour, baking powder.
  • Add remaining ingredients.
  • Grease muffin tins.
  • Spoon batter into tins, about 2/3 full.
  • Bake 15-25 minutes.
  • When cool frost with peanut butter.
  • Top with a small homemade biscuit, if desired (teensy cookies cutters can be found at many craft stores).
